I did this shot of me with the camera in the mirror with both eyes open. Some said it was creepy, some said I looked like a nazi. Some said it was hot. It's an idea, anyway. Check it out.
Any parameters? More formal? Can it be a "fun" photo? Restrictions?
Hook your camera up to a monitor (with the monitor facing you). Take the picture with a shutter release remote/wire.

My favorite self portrait I took in high school by simply focusing my camera on my hand. Then I held the camera and pointed it back at me. Turned out pretty well.
Can you use a remote or timer? If so, the possibilities are endless. Pick a cool outfit.
How about one of you standing under or beside the T-38s on NASA Rd 1?
Or in front of the San Jacinto monument. Or on the battleship Texas.
Or... on the docks of a marina with crowds of masts behind you.
Or... is there some polished hardware on site that you can get a good reflection off of?
